Bone is stronger than steel by weight

Not in absolute terms. Pound for pound, it is a remarkable material.

Cortical bone has a high strength-to-weight ratio, outperforming steel when weight is held constant, thanks to a composite structure of mineral crystals bound in collagen. It is also self-repairing and continuously remodelled, which no engineered material yet manages. Absolute strength, however, is far below steel.
