Hair and nails do not keep growing after death

Skin dehydrates and retracts after death, exposing more of the hair shaft and nail bed and creating the impression of growth. Growth requires ongoing cell division, which stops when the supply of oxygen and glucose does. The observation is genuine; the inference is wrong.
