Turritopsis dohrnii can transform its adult cells back into a polyp colony when injured or starved, effectively resetting its life cycle. In principle this can repeat indefinitely, which is why it is called the immortal jellyfish. In practice it is still eaten and still gets sick, so individuals do die.
